First of all, let's prepare and cut all the vegetables needed onion, tomato, spring onion, cilantro and chilies.
In a mixing bowl, prepare the dressing by combining fish sauce, lime juice, sugar, minced garlic and chilies. Stir until sugar dissolve. keep it aside.
Soak glass noodles in a room temperature water and set aside to soften.
In a deep pan, add enough water simmer over medium- high heat.
Add shrimp and cook just until shrimp are opaque and cook through. Remove and strain from the water.
Add the minced pork and cook until done. Remove and strain
Add the softened noodles, Let it boil for 1 minute or until the noodles cook. Drain and rinse under cool running water to stop the cooking process.
Transfer the noodles into a big bowl, add shrimp, minced pork, onion, tomato, spring onion and coriander.
Pour the dressing and toss everything together to combine. Sprinkle with chopped peanuts and serve immediately!
