Thai Glass Noodle Salad (Yum Woon Sen) is a simple, fresh noodle dish that you can find easily in every markets in thailand. Yum woon sen is one of my favorite salad.

Yum Woon Sen or Thai Glass Noodles Salad is simply delicious cold noodles salad that you can make right in you own kitchen in just a few minutes, the taste is very refreshing and the fresh crunchy vegetables and herbs perfectly tossed with the sweet, tangy and salty yum woon sen dressing, adding roasted peanuts before serving gives extra crunch to the salad.

There are many variations of this Asian dish,but each contains a perfect balance of sweet, tangy and salty flavors of the sauce. The big part of that distinctive Thai flavor is the use offish-based seasonings. These include fish sauce and the citrusy flavor of lime that adds depth flavor to the dish. The combination of these flavors is what makes this thai glass noodles salad so addictive and mouth-watering!

Is Yum Woon Sen a Healthy Salad?

Since they are made out of mung beans starch which also known as bean thread noodles, cellophane noodles or glass noodles, Semi-translucent when dry, when freshly cooked, glass noodles are truly glass-like and translucent. In Thailand glass noodles considered to be good for those who are trying to lose weight. Not because they’re particularly healthy (it’s still carbs!) but because glass noodles can absorb a lot more water than other noodles and it is gluten- free!

GLASS NOODLES SALAD DRESSING

The dressing of this glass noodles salad is also a great dressing for any green salad and can be use also as dipping sauce.

  • Fish Sauce – It will add umami, savory and salty flavor to the dressing.
  • Lime Juice – Make sure to use the freshly squeezed lime juice for best flavor, it gives a citrusy and tangy flavor to the dish.
  • Sugar – balance out the sourness and the saltiness of the dressing.
  • Bird’s Eye Chili – This add extra kick to the salad, you can add as many as you want! Start with 1 for medium to mild spice level,if you love it really spicy go with 3.
  • Minced Garlic – It adds flavor to the dressing.

For the dressing

Instructions

  1. First of all, let's prepare and cut all the vegetables needed onion, tomato, spring onion, cilantro and chilies.

  2. In a mixing bowl, prepare the dressing by combining fish sauce, lime juice, sugar, minced garlic and chilies. Stir until sugar dissolve. keep it aside.

  3. Soak glass noodles in a room temperature water and set aside to soften.

  4. In a deep pan, add enough water simmer over medium- high heat.

  5. Add shrimp and cook just until shrimp are opaque and cook through. Remove and strain from the water.

  6. Add the minced pork and cook until done. Remove and strain

  7. Add the softened noodles, Let it boil for 1 minute or until the noodles cook. Drain and rinse under cool running water to stop the cooking process.

  8. Transfer the noodles into a big bowl, add shrimp, minced pork, onion, tomato, spring onion and coriander.

  9. Pour the dressing and toss everything together to combine. Sprinkle with chopped peanuts and serve immediately!

Note

  • If you don't have fresh shrimp, frozen one still work.
  • Bird's eye chili are extremely spicy. Start with 1 for medium to mild spice level,if you love it really spicy go for 3. If you don't have bird's eye chili you can use some red pepper flakes, adjust the amount of spice you prefer.
  • The dressing can be made the day before and keep in the fridge and the veggies can be cut also ahead of time but do not mix them until right before serving with the noodles.
