The star for this dish is the sauce. The nuttiness of the roasted sesame oil, and the combination of soy sauce, oyster sauce and dark soy sauce, really help to round out the sweetness from sugar and spiciness from the chili sauce.

In this recipe, i am using pork shoulder. When you’re choosing pork, there are three cuts that are very popular. The first is pork tenderloin, the second is pork butt, and the third is pork shoulder. You can use either for this recipe. Look for meat that is pinkish-red in color, with a small amount of marbling for flavor – this is most juicy. I recommend avoiding pork with excessive fat or a strong odor.

Ingredients You’ll Need For the Garlic Sauce
- Light Soy Sauce – It gives a strong aromatic umami flavor to the sauce, it’s a thin and salty sauce.
- Dark Soy sauce – Gives a good colour to the dish, it is a thicker sauce less salty and lightly sweeter.
- Oyster Sauce – Boost the umami flavour of the sauce.
- Red Wine Vinegar – It gives a tangy flavour to the sauce, you can also use any type of vinegar available in your pantry.
- Sesame Oil– Make sure to use the roasted sesame oil, it gives depth and nutty flavour to the sauce.
- Chili Sauce – Adds spice and flavor to the sauce for the extra kick.
- Garlic – Adds so much flavor to the sauce and your stir- fry.
- Sugar – It’s essential to balance the saltiness of the soy sauce. Plain white sugar is fine. Maple syrup and honey also work but will add a bit of extra flavor.
- Black pepper – Adds earthy spice to the sauce.

In a bowl, combine soy sauce, oyster sauce, dark soy sauce, vinegar, chili sauce, minced garlic, sesame oil, sugar and black pepper. Mix to combine. Set aside
For Stir - Fry

In a bowl with pork slices. Add soy sauce to the pork, mix to combine then add corn flour. Toss until the pork completely coated with corn flour.

Add oil to the wok, heat over medium high heat. When the oil is hot, add the pork pieces one at a time do not over crowd the wok. Fry until the pork is lightly browned around the edges. Remove and cook the remaining pieces.

Using the same wok, add oil heat over medium high heat until smoking. Add onion and ginger, saute for a minute the add carrots, jalapeno and spring onion. Stir fry for another minute.

Add the pork pieces, stir fry for a minute then pour in sauce, stir until combined with the sauce. Cook for another 2-3 minutes, garnish with toasted sesame seeds.

Note
Storing left over stir- fry. Place your cooled stir fry into a shallow container with an airtight lid. This will help keep out moisture to prevent sogginess. Keep in the fridge for 2-3 days.
