Pineapple Fried Rice

Pineapple fried rice is of thai origin and it is one of the famous dish in many thai restaurants, the combination of sweet, caramelized pineapple with Thai spices. The savory taste blends well with the fruitiness of the pineapples and adding some cashew in the fried rice gives extra crunch!

When i first tested this recipe, it was so delicious and beautiful as they serve it in a pineapple bowl.

I love fried rice and this is one of my favorite and there’s quite a bit of variations out there but their are times that i crave for thai dishes and i don't feel like going out so i decided to make my own version of restaurant style pineapple fried rice and i want to share with you all.

If you want an extra kick on your fried rice feel free to add your favorite spices and seasonings like chili powder, cayenne pepper and sriracha hot sauce for a kick of heat. You can also use your favorite kind of protein – ham, chicken, or shrimp, or you can even keep it vegetarian with just the pineapple.

Although it takes a little effort, it is well worth the time. You got a perfect presentation of your pine apple fried rice instead of using plate and it adds a special touch to any brunch, lunch or dinner party spread.

 

How to make Pineapple Bowl

  1. Cut the pineapple in half, lengthwise. You can either keep the crown (pineapple stem) attached or sliced it off.

2.Cut the perimeter with a paring knife. Angle the knife slightly toward the center.

3. Slice the center. Make some slices in the center of the pineapple.

4.Scoop out the fruit of pineapple with a spoon.

5. Cut Pineapple into small chunks.

Ingredients
  • 1 whole pineapple (cut into small chunks)
  • 250 grams shrimp
  • 2 cloves garlic (minced)
  • 1 teaspoon small onion (finely diced)
  • 1/2 cup frozen peas and carrots
  • 2 cups left over rice
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon black pepper
  • 1/4 cup toasted cashew
Instructions
  1. Heat oil in a large pan or wok over medium high heat

  2. Add egg and when it's about to cook quickly stir.

  3. Add shrimp, cook for about two minutes, stirring often until the shrimp just start to turn pink. Keep it on the side of the pan.

  4. sauté garlic and onion until fragrant. Add frozen peas, carrots and rice. Combine well.

  5. Add in fish sauce and oyster sauce. stir until fully combine. Stir fry for another minute and sprinkle with black pepper.

  6. Add pineapple chunks and cashew nuts then garnish spring onion.

  7. Serve Hot!
