In a bowl, season chicken with salt, black pepper, grated ginger and chopped garlic. Mix until combine. Marinate chicken for at least 30 minutes.
In a small mixing bowl, combine chicken broth, soy sauce, garlic chili paste, sugar, vinegar and cornstarch. Stir until well combined. Set aside until ready to use.
Prepare onion, bell peppers and mango, cut into chunks.
In a mixing bowl, combine cornstarch and flour. Mix to combine. Dredge chicken into the flour mixture. Shake off excess flour
