This Mango Chicken is an asian inspired dish, a super simple and super easy lunch or dinner recipe that everyone will surely love. Perfect pair with hot steamed rice. The flavor combination of the tropical taste of mango, chicken and bell peppers really works with sweet, spicy and savory sauce to make a delicious meal.

It is perfectly okay to use either chicken breasts or thighs, whichever you prefer! To get nicely browned chicken, cook it in batches instead of all at once. A crowded pan will cool down a lot faster and as your pan cools down, your food will stick, won’t brown and it will release all its moisture into the pan so instead of a crisp sear, you’ll end up with food that’s soft, doesn’t brown properly and dry. I highly recommend to double fry chicken if you have extra time as this gives chicken a thicker and crunchier texture.

  1. In a bowl, season chicken with salt, black pepper, grated ginger and chopped garlic. Mix until combine. Marinate chicken for at least 30 minutes.

  2. In a small mixing bowl, combine chicken broth, soy sauce, garlic chili paste, sugar, vinegar and cornstarch. Stir until well combined. Set aside until ready to use.

  3. Prepare onion, bell peppers and mango, cut into chunks.

  4. Heat the oil in a large pan over medium high heat.
  5. In a mixing bowl, combine cornstarch and flour. Mix to combine. Dredge chicken into the flour mixture. Shake off excess flour

  6. Carefully add chicken pieces to the pan with hot oil, one at a time. Cook the chicken in batches.

  7. Cook the chicken for 4-6 minutes or until browned and cooked through. Repeat the process with any remaining chicken. Remove and let it rest 5 minutes before double frying.

  8. Using the same wok, heat oil. saute onion and garlic until fragrant.

  9. Add bell peppers, stir fry for a minute then add mangoes.

  10. Pour the sauce, let it simmer until the sauce start to thicken.

  11. Add the chicken, toss to coat the chicken with the sauce.

  12. Serve and Enjoy!
