In a bowl, season chicken with salt, black pepper, grated ginger and chopped garlic. Mix until combine. Marinate chicken for at least 30 minutes.

In a small mixing bowl, combine chicken broth, soy sauce, garlic chili paste, sugar, vinegar and cornstarch. Stir until well combined. Set aside until ready to use.

Prepare onion, bell peppers and mango, cut into chunks.

Heat the oil in a large pan over medium high heat.

In a mixing bowl, combine cornstarch and flour. Mix to combine. Dredge chicken into the flour mixture. Shake off excess flour

Carefully add chicken pieces to the pan with hot oil, one at a time. Cook the chicken in batches.

Cook the chicken for 4-6 minutes or until browned and cooked through. Repeat the process with any remaining chicken. Remove and let it rest 5 minutes before double frying.
