Heat a large pot of water over high heat. Cook dried udon noodles according to package directions.
In a bowl, combine beef, soy sauce, sesame oil and cornstarch. Mix well until combined. Set aside until ready to use.

Heat the vegetable oil in a large wok or frying pan over high heat. Add beef strips, spreading them all over the wok and letting them cook undisturbed for a minute. Flip and cook the other side until it’s brown all over, then remove it to a plate and set it aside.
