How to Prepare Chicken Potato Drumstick
If you have a lot of chicken and has extra time, I highly suggest making some chicken potato drumsticks! Especially if you are in the mood for something little different, sometimes you just have to treat yourself to the finer things in life.so go ahead and mix your juicy chicken with creamy mashed potatoes and cheese and fry it up until it’s nice and crispy!
- First, Cook the potatoes in a pot until for tender. When it is cooked remove the potatoes and transfer them to a bowl and mash using a potato masher.
2. In a medium pot with water, Cook the skinless chicken drumstick together with all the aromatics to enhance the meaty flavor. Let it boil for 25- 30 minutes until chicken is tender. When the chicken is cooked removed from the pot and using a fork, separate the chicken meat from the bones. Keep the bones for later use.
3. When the chicken meat are completely separate from the bones, Chop me meat into tiny bits.
4. When both chicken and mashed potato are ready. Time to make a nice mixture. In a large bowl, combine chicken, mashed potato, seasoning and shredded cheese. ( you can use any cheese you prefer). Mix to combine
5. Scoop some chicken and potato in your hand and flatten it a bit. add more cheese then fold in drumstick bone in the middle. Shape the mixture into a drumstick shape.
6. The last steps would include coating the chicken potato drumsticks in the necessary coatings (flour, egg, breadcrumbs) to give it a nice and crispy layer.
Your chicken should look like this after dredging and coating, If you have extra time chill the coated chicken inside the fridge for about 30 minutes before frying. This cooling time will help the layers of breading ingredients solidify and adhere better after the chicken cooks.
Tips
- To makes this recipe more convenient, plan ahead and prepare your mashed potatoes and deboned your chicken in advance. This way, you’ll have dinner on the table even faster!
- Use freshly grated cheese,as opposed to the pre-shredded packaged cheese. Those packs come with anti-clumping agents which not only taste different, they don’t melt as nicely.
- Like a spicier drumstick? Think about tossing in a few red pepper flakes, diced jalapeno, or a bit of hot sauce to the potato chicken mixture.
