Preheat the the oven to 350 F. Grease a 9×9 baking pan and line with parchment paper.

Combine flour, baking powder and salt in a bowl. Mix to combine and set aside.

In a large mixing bowl. Add sugar and egg, whisk until light and fluffy. Add soften butter, vanilla and condensed milk, whisk again until smooth.

Add dry ingredients to the wet mixture, mix again until just combined, making sure not to over mix. Add the grated cheese and fold this into the mixture.The batter will be thick – it’s okay.

Transfer the batter into the greased pan. Spread the batter evenly using a rubber spatula. Add more cheese on top.

Bake in a preheated oven at 350 F for 20-30 minutes or until a toothpick inserted in the middle comes out clean.
