About the ingredients
- Chicken drumstick – I am using chicken drumsticks with skin on and bone in, this recipe works also good with chicken thigh as these two parts of the chicken actually become more tender the longer they cook and rich in flavor.
- Ginger – It gives invigorating aroma to the dish.
- Onion – adds flavor and texture to the sauce.
- Garlic – it gives a strong flavor and aroma to the food.
- Star anise – adds a depth flavor sweet licorice like – peppery flavor.
- Bay leaves – it gives an aromatic flavor in cooking.
- Light soy sauce – it is saltier and adds more flavor, If you can, use low-sodium soy sauce so as not to overwhelm the dish.
- Dark soy sauce – generally thicker, less salty and lightly sweeter than light soy sauce.
- Sugar – adds sweetness to the dish.
- Chili – adds extra kick to the sauce.
- Rice wine – As wine cooks, its flavor becomes concentrated, so it also lends savoriness or sweetness to a dish and can be substitute with rice vinegar or apple cider vinegar and in some cases, rice wine use as a key ingredient in certain Chinese dishes.

Heat oil to the pan, pat the chicken dry with paper towel. Add the chicken one at a time, sear the chicken on all sides.

When all the chicken turns golden brown, add ginger and onion, pour the rice wine and saute.

Add star anise, bay leaves, garlic, light soy sauce and dark soy sauce stir until all combine. Add water and cover the pan and let it cook until the sauce reduce.

Add sugar and dried chili, stir and flip the chicken to ensure that both sides are simmer with the sauce.

Cover and allow to simmer for another 15 minutes until the sauce thickens and the chicken is tender and golden.

Serve and Enjoy! Serve Chicken over rice and spoon some sticky sauce on top of big bowl of rice.
